Jackson's most impressive accomplishment here was making a 12 hour movie feel short. The Extended Editions are so great, and so long they become more of an event than a simple watch. It's like Lawrence of Arabia in that way - you'd better have some snack and some drinks handy because you're going on a wild ride.
The Hobbit films are not awful movies but they are not masterpieces like the LOTR trilogy is. The movies are very enjoyable but there is just too much CGI, chaotic storytelling, and multiple plotlines that aren't really interesting. The movies were rushed and the story of the Hobbit itself is inferior compared to Lord of the Rings.

The added depth and book details are a treasure, even if the pacing drags at times. There‘s no definitively "better" option. Each version offers its own artistic strengths and flavors of Middle-Earth. Extended cuts indulge hardcore fans, while theatrical editions work brilliantly for casual viewers.
